THE GRILL

When ready to cook, preheat the pellet grill to 325°F (163°C) with the lid closed for 10-15 minutes using maple wood.

METHOD

Score the outside of the ham with a diamond pattern and insert a whole clove into the center of each diamond. Transfer the ham to a large cast iron pan.

Place on the grill and cook for 2 hours until the internal temperature reaches 125°F (52°C).

In the meantime, prepare the glaze. Combine the onion, garlic, Worcestershire sauce, apple cider vinegar, tomato ketchup and bourbon in a saucepan and bring to a simmer over moderately high heat for 5-6 minutes. Bring the mixture the boil and then turn down to a simmer for 20 minutes. Season and strain the sauce and set to one side.

Baste the ham with a third of the glaze and increase the temperature of the pellet grill to 375°F (190°C). Continue to cook the ham until the internal temperature reaches 140°F (60°C). Continue to baste the ham with the glaze every 10 minutes.

Take the ham off the grill and allow to rest for 20 minutes before slicing and serving.
